Now here's a very special treat. From Casa Madaio, one of our favourite Ebolian creameries, comes this unique creation.
It combines within a single product the originality of drawn curd and the ingenious idea to fill it with butter to preserve it even in the hottest of summers. The outer amber-coloured rind of drawn curd is very thick and elastic. Inside the drawn curd, the knob of butter ranges from pale to bright yellow, depending on where the animal grazed.
The aromas are warm and flowery, with hints of lilies and ripe fruit, and occasionally a slightly roasted aroma. It has a creamy consistency that melts in your mouth, thanks to the large amount of unsaturated fatty acids found in the milk of free grazing animals.
