Bethmale (Couserans) Trois Lait
The scenic Ariège is home to goats, sheep and cattle and the enterprising locals make wonderful traditional cheeses from the milk of them all. In a deliciously quirky twist, the ancient recipe for Bethmale (also known as Couserans) has been adapted to utlise mixed milk. The blend is perfectly balanced yielding a lovely roasted nut flavour with hints of perfumed grass and aged wood. The supple texture makes it a beautiful dessert cheese, paired with a sweet Muscat or barley wine. Don't miss it!
